Ralitsa's Famous Potato-Mushroom Casserole

Rali says, It is quick to prepare and very tasty for all potato lovers like me. Yet it is not as fattening as French fries and not as bland as boiled potatoes. It can be served as a side dish with roasted meats or consumed as a main vegetarian dish with a salad.

How to make it:

Mix everything well in a casserole dish and bake in the oven at medium for 40 min or until the potatoes are cooked and golden. Serve hot but it is equally delicious at room temperature as long as you have not used butter.

If there are any leftovers you can take it out of the fridge, mix it with some lemon juice, diced pickles and mayonnaise and have a cooked-vegetables salad.
