Rali and Rich honeymooned all over Sri Lanka for three full weeks in 1998 and never had this salad. However, when we lived in Croatia, a Sri Lankan friend taught a cooking class and made this refreshing and appetizing salad with fresh pineapple. She was in Zagreb with the Australian embassy (20 years earlier she had eloped with her Australian sweetheart) and was well known for her exotic gourmet dinner parties. How to make it:
Slice the pineapple in the middle vertically starting from the top (leave the leaves on). Scoop or cut the pineapple from the shell, cut it in cubes and set aside in a mixing bowl. Slice the green peppers and the onion in thin strips, cube the tomatoes, mix with the pineapple. Juice the lemons, add salt and pepper, stir and pour the dressing over the salad, mix together. Use the two hollowed pineapple halves for serving bowls.
