With fresh warm pita bread so readily available in Abuja, hummus has become a common dish. Here is a basic recipe that Rali uses to make irresistible fresh hummus in 5 minutes. John M., our former neighbor in Abuja, enjoyed it on a number of occasions, and can verify its irresistibility.
Here's Rali's recipe...
What you need:
How to make it:
Mix all ingredients, puree with a blender, taste, adjust salt, lemon juice, olive oil to taste, and add water until it's not too thick, but not runny. Now that you have made the perfect hummus, it is all about presenting it. Spoon into an attractive bowl, decorate with your choice of (a) wedges of tomato, cucumber, and green pepper, (b) sliced black olives, (c) lemon wedges, (d) sprigs of parsley or chopped parsley, or (e) sprinkled paprika. Make patterns on the surface of the hummus, and finish with a drizzle of olive oil. Serve with pita bread sliced into wedges (I like the whole wheat one from Amigo supermarket) or with the tiny pitas (very popular with children).
