A quick and easy dessert. But if you tell your guests you made it from scratch according to a traditional Bulgarian recipe, they'll think you did a lot more work in the kitchen than you actually did.

Beat the eggs and the sugar at high speed for 5 minutes or till the mixture thickens. Add the flour and the vanilla and the grated lemon/orange skin. Beat till well-mixed. Pour into a buttered and floured pan or into small individual pans.
Bake in a preheated oven at 375° F for 30 min or till it becomes golden and is not liquid when you poke it with a fork. Enjoy!
Note: You may add a couple of spoons oil or melted butter but then you will have to use a packet of baking powder too. It is a delicious variation for those who do not count their calories.
Nut variation: Mix together with the floor a cup of grated nuts (peanuts and walnuts are especially good in this).
