Rali says, I am not a big fan of pasta, especially pasta with red tomato sauce since this is the only kind that Rich cooks. So when I give in to his wish that I make pasta, I have to come up with something different. And since I like cheese very much this is a good way to have both. But not as light and healthy as red sauce pasta.

Fry the flour in the butter. After 2-5 minutes, add the milk, salt, and pepper, and stir so you have a smooth sauce. If you want to make it cheesier, now is the time to add the cheese, and keep it on the burner till the cheese is melted. Add the mushrooms and the parsley, and your sauce is ready. Cook the pasta in enough water, drain, and mix with the sauce.
If you make the sauce with less butter and more milk and add other cooked vegetables like peppers, tomatoes, beans, corn, peas, carrots, you may have a very healthy and colorful pasta dish.
If you use lasagna sheets and some grated cheese you can make a tasty vegetable lasagna with grated cheese sprinkled between each layer and some on top.
